For thin, fast-baked pizza, start with a floor temperature of 750–850°F (400–455°C) and a strong flame across the dome. That is the practical range Ooni gives for Neapolitan-style pizza in its compact ovens. The 2024 Associazione Verace Pizza Napoletana (AVPN) rules are narrower: 380–430°C (716–806°F) at the oven floor, about 485°C (905°F) at the dome, and a 60–90-second bake.
Those figures describe two related but different targets. The familiar broad answer—750–900°F (400–480°C)—is useful only if it prompts a floor-and-dome check; it is too imprecise as one surface target. Use the AVPN range when you are trying to reproduce its defined style in an oven capable of the specified top heat. Use 750–850°F as a working floor range for a home wood-fired oven, then adjust from the bake itself. For thicker or enriched pizza, lower the floor so the center has time to set before the outside scorches.

The table is a starting map, not a substitute for your oven manual or the first pizza. Dough with oil or sugar browns more quickly than a lean flour-water-salt-yeast dough. A thicker base also needs more time for heat to reach its center. That is why taking a pan pizza into a 90-second Neapolitan bake can blacken the outside before the crumb is cooked.

Why floor and dome temperatures are different
A live-fire oven cooks a pizza in three ways at once:
- Conduction moves heat from the floor directly into the dough.
- Radiation from the hot dome and flame browns the rim and toppings.
- Convection carries hot gases through the chamber and toward the opening.
The floor therefore predicts the underside better than an air thermometer does. The dome and flame determine whether the top can keep pace. A single display mounted in the oven wall may describe the chamber at its sensor, but it does not necessarily report the launch spot on the floor.
For the AVPN-defined style, the published relationship is not simply “the dome is 100°F hotter.” Its current specification places the floor at 380–430°C and the dome at about 485°C, a difference of 55–105°C (99–189°F) depending on where the floor sits inside its permitted range. In a different oven, measure both surfaces or use the floor reading plus the actual bake as your feedback.
How to measure the oven without fooling yourself
An infrared thermometer reads a surface, not the air. Use one rated above the highest temperature you expect; many consumer models top out somewhere between 950 and 1,100°F (510–590°C). A display pinned at its maximum says only that the target may be at or above the instrument’s limit.
Use the same measurement routine every time:
- Stand in the normal operating position. Do not lean into the oven mouth.
- Aim at the bare floor where the center of the pizza will land, not at glowing coals or flame.
- Take a second reading several inches closer to the fire and a third the same distance toward the cooler side.
- Record the three readings as cool / launch / hot. For example, 735 / 790 / 830°F tells you far more than a single “790°F.”
- Recheck the intended launch spot after each pizza or each pair of pizzas.
Distance matters. Fluke explains that a thermometer’s distance-to-spot ratio defines the diameter of the area being averaged; with a 12:1 instrument, a reading from 12 inches away represents roughly a 1-inch spot. The laser is only an aiming guide. Check your model’s ratio, keep the measured patch smaller than the section of floor you are targeting, and maintain a clear line of sight because smoke or dust can distort infrared readings. How to tell when a wood-fired oven is ready
For a masonry oven, a dome that changes from soot-blackened to clean gray or white is a useful heat-saturation sign. Forno Bravo's firing guide says the whitening begins as accumulated carbon clears and reports roughly 45 minutes for its oven to reach a clear dome and a 700°F cooking surface, depending on size. That cue does not measure the exact launch spot, and it does not apply in the same way to every steel portable oven.
Use three checks in this order:
- Follow the model’s firing and preheating instructions. Portable ovens differ sharply in burner, fuel tray, door, chimney, and stone design.
- Measure the launch spot. For compact Ooni ovens, the maker's first-pizza method says preheating can take up to 20 minutes and identifies 750°F at the stone as ready. A large masonry oven may take much longer to heat through.
- Confirm with the first bake. Note time to underside color, time to top color, and whether the center sets. Adjust one variable before the next pizza.
The old flour test can remain a rough backup when no thermometer is available: a pinch that blackens in 2–3 seconds suggests an excessively hot surface, one that browns in about 5–10 seconds suggests fast-pizza heat, and one barely colored after 15 seconds suggests a cooler floor. Sweep every trace away before launching. Flour color is affected by the flour type and quantity, so it cannot confirm a temperature and should not overrule the manual or a suitable thermometer.
How long should a wood-fired pizza oven heat up?
Keep the existing planning ranges in mind: 30–60 minutes for a compact portable wood-fired oven and 1.5–3 hours for a masonry or brick oven. Treat them as scheduling allowances, not promises. Ooni’s compact-oven guidance can be as short as 20 minutes to a 750°F stone, while Forno Bravo’s example reaches a clear dome and 700°F surface at roughly 45 minutes. A masonry oven can take longer because the fire must heat hundreds of pounds of brick and stone, not merely the chamber air. Cold weather, damp fuel, wind, and the maker’s required curing or firing sequence can extend the process.
A controlled sequence is easier to repeat:
- Light kindling and a few small, manufacturer-approved wood splits. Let the fire establish for 15–20 minutes where that sequence matches the manual.
- Add fuel gradually instead of overfilling the burner or firebox. A small split every 15–20 minutes is a workable starting cadence in some ovens, but flame condition and the manufacturer’s instructions determine when to add the next piece.
- In a masonry oven, watch the dome clearing spread from the crown.
- Move the fire to the side with the proper metal tool. Forno Bravo recommends side placement because it lets the cook see the fire-facing edge and supports the oven’s circulation pattern.
- Brush the landing area with the manufacturer-approved oven brush. Keep hands and ordinary kitchen tools outside the chamber.
- Where the oven design allows it, a 10–20-minute rest after moving the fire can moderate an overheated first-pizza floor. Measure before deciding.
Do not infer saturation from hot air alone. The working test is whether the floor remains in range through consecutive bakes.
Run a two-pizza recovery test
This is the most useful addition to a one-time preheat number because it shows what the oven can sustain.
- Record the center launch-spot temperature immediately before pizza one.
- Bake and rotate as normal; record the total bake time.
- Measure the same floor spot as soon as the pizza comes out.
- Wait 2 minutes, measure again, and launch pizza two only when the spot returns to your chosen range.
- Repeat after pizza two.
Suppose the floor reads 800°F, falls to 705°F, and recovers to 770°F after 2 minutes. That oven can probably hold a two-minute serving rhythm with the present fire. If the second post-bake reading falls farther or takes longer to recover, pause and rebuild the fire. If the floor stays hot but the top falls behind, restore a clean live flame rather than heating the floor further.

The AVPN rules specifically call for lifting and rotating the pizza toward the fire while keeping it on the same area of the floor. In a compact oven, Ooni’s method calls for turning every 20–30 seconds during a 60–90-second bake. Those are useful starting intervals; the browned edge facing the fire remains the immediate cue.

What if the oven only reaches 650°F?
You can still make good pizza at 600–700°F (315–370°C). Change the plan instead of pretending it is a 90-second Neapolitan bake:
- Expect roughly 3–5 minutes, with more even browning and less dramatic spotting.
- Stretch a little thinner so the center sets during the longer bake.
- Drain fresh mozzarella and keep sauce light so the middle is not overloaded with water.
- Use a New York-leaning dough with 1–2% oil in baker’s percentages if that matches the recipe; enrichment helps browning at the lower temperature.
Judge the finished base and center, then change one factor at a time. If the pizza is pale but cooked, raise the next launch temperature modestly. If it is dry before it browns, shorten the bake by moving to a hotter measured patch or adapt the formula.
Fuel, fire, and burn safety
Use only fuel approved in the oven manual. The AVPN lists oak, ash, beech, and maple among woods that should not give off smoke or odors that alter the pizza. The U.S. Environmental Protection Agency's moisture-meter guidance says wood at 20% moisture or less burns more effectively; its measurement method is to split a piece and test the newly exposed face with a moisture meter. Wet or green wood makes less heat and more smoke. Do not burn treated, painted, glued, or waste wood.
A live-fire pizza oven is not an indoor appliance unless its manufacturer and installation documentation explicitly say otherwise. The Ooni Fyra manual, for example, requires outdoor use on a sturdy, stable, nonflammable surface away from structures and combustible materials. It says not to use the oven in a building, garage, tent, caravan, motor home, boat, or other confined or habitable space. Fuel burning can produce carbon monoxide; the CDC describes it as colorless and odorless and warns that it can cause sudden illness and death.
Follow the oven’s stated clearances and local fire restrictions. Keep children and pets away from the work zone. Wear heat-rated gloves, use only long-handled tools intended for the oven, and never move, disassemble, cover, or store the oven while it is hot or while embers remain. The cited Fyra manual specifies at least 2 hours of cooling for that model; use your own manual’s longer requirement if it differs.
The repeatable target
For a home wood-fired Neapolitan-style pizza, 750–850°F at the launch spot, a strong dome flame, 20–30-second turns, and a 60–90-second total bake form a workable first target. For the formal AVPN style, use its published 380–430°C floor / approximately 485°C dome relationship. For any other style, set the floor to the dough and thickness rather than chasing the oven’s maximum.
Measure three floor points, record the first bake, and measure recovery before the second. Those four observations turn “the oven feels hot” into a repeatable firing plan.
